Steve:
I love Ukraine. Have been four times in last two years. You will love it too. The people are warm and friendly, the food is different, and lifestyle is quite laid back. I have never experienced any real problems on entrance and exit. I encourage you to always declare your cash, and other valuables at customs. If they find that you have something you didn't declare, they can keep it. Language can be difficult once you are on your own in country clear of airports, etc. A Russian or Ukrainian interpreter is very helpful. Have a great trip.
