Shaping our Provence itinerary

We will be going to Provence the last two weeks of May (would love to do June but can't this year). We are going to Paris for 3 nights--that leaves us 10 more nights. We went to Provence about 10 years ago, stayed in Avignon, St. Remy, Aix and then St Tropez and Cannes.
Our thoughts are to take train to Avignon and get a car. Should we just stay there for one night?
We then would go to St. Remy for 2 nights, somewhere around Gordes for 2 nights (suggestions as to where near Gordes??).
We would then like to go to St. Tropez for a night. Should we stay somewhere on the way before reaching this destination--not sure how long of a trip it is----and not sure if there is some more exploring we should do in another region?
After St. Tropez, we could stay two nights in the Riviera (not sure we want to do St. Paul as it's further inland and we might like to be on the coast) Cannes is an option.
The last night we think we should stay in Nice as the flight I can book is early in the morning.
Looking forward to hearing some thoughts!
