shannon to mt. juliet

we are flying into shannon on the 4 of march,renting a car and driving to mt. juliet in kilkenny. Never been to Ireland and are very unfamiliar with the lay of the land! My husband is a golfer, i am a "spa"er, but other than that, what are some great sidetrips from Mt.Juliet, and some not-to-be missed restaurants, etc??? any input would be greatly appreciated! We are soooo behind in our research!
