shannon to dublin via donegal

We will be travelling in Ireland in July with 2 teens (ages 15 and 13). I am thinking of flying into Shannnon, and taking 7 days to get to Dublin, where we will spend another 5 days. We like walking, castles , music and possibly sports (horseback riding?).

I'd appreciate input on favorite sites along this route -- or suggestions for alternate routes, if there are other nice spots along the way. Not too interested in stopping in Belfast, since we'll have lots of city time in Dublin.

Thanks for any input on this route!
