Seeking Latin Quarter hotel Reccomendation travel Sept 2015

I'm finding many places full,also it's hard to discern distance to what supports my needs/interests.

I'll be in Paris 5 nocs with city site seeing , day trips to Versailles and maybe

champagne tour. I'd prefer close walking distance to metro and in neighborhood with activities that

include cafes, bistros,bakeries and markets for tasting the

local menu and low key evening entertainment.. I'm arriving from CDG/depariting early 7a from

,Paris TGV to Monte St

Michael/Bayeux, for,2 day stay then train to Provence/Avignon. I'm solo

traveler,also would like nice,clean and safe accomadation 2-3 star if possible .
Traveling in Europe 5 weeks so budget is a factor. So if there are any general consensus

recommendations for places to stay,they would be much appreciated.
