Scotland in August--Prebook B&B's?

We will be taking a 10 day road trip in Scotland in Aug 2012. This trip will NOT include Edinburgh (did that last summer and want to avoid the crowds this trip). Do I have to prebook our rooms ahead of time or will we be able to just "wing it" in the countryside?

All we require really is a clean quiet room. Will we be able to find this by just driving by and knocking on a door of a B&B? We have done this successfully in England before in years past but it was off season.

We also can mix it up with an inn, hotel, etc.

We just don't know how rigid of a schedule we need to keep and we don't want to end up having to spend the night in our car either!
