Santorini flights and itinerary

Hi All! My husband and I are planning a belated honeymoon to Italy, Greece and Turkey at the end of May 2013. Where we're struggling with the itinerary is Santorini. We're going to fly in order to save time. I had read on a few other posts where it was recommended to put Athens on the back of your trip. Is this based solely on taking a ferry? Or is it a good idea also when flying? Our options are:

a) Fly back from Santorini in the evening to Athens, spend the night in Athens and take a morning flight to Istanbul the next day.

OR

b) Fly back from Santorini early morning to Athens and then take a flight to Istanbul the following day.

OR

c) Fly straight from Santorini to Istanbul with a 2 hour, or a 5 hour, layover in Athens.

Has anyone done this that could offer advice? Is it best to play it safe and fly in from the island the day before our flight to Istanbul? Or is it fine and normal to take the flight from Santorini on the same day as our flight to Istanbul? This seems like it would make the most sense and save time, however, I wondered about the risk of our flight being cancelled or delayed coming in from Santorini, especially since our time in Istanbul is limited (3 nights)? Also, how much time is needed once in Athens to get on an international flight to Turkey?
