Santorini - 1981 vs 2011

I went to Santorini in 1981 as a young graduate, with a backpack and not very much money. I was living in Europe for one year after graduation, working in Amsterdam at a job that did not pay much but that allowed me plentiful vacation time. My trip was in April. I was travelling alone, and met some people from Australia and California. We had a wonderful time. I stayed in Thira, and we "discovered" the red beach, spent next to nothing. I wonder whether Oia even had an places to stay. It was enchanting.
Well, its 30 years later and my husband and I want to go back to celebrate our 30th anniversary. Our economics have changed, and from preliminary research, so has Santorini (of course I have seen all the magazine covers over the years). So, all you Greek travelers out there - what should we expect? We'd like to stay in Oia, I think, although I am open to suggestion, and given that it looks like we do this about once every 30 years ( and he has not yet been) we'd love your help in planning the perfect trip...

Oh, and as an aside, we're thinking of combining Santorini with either Istanbul or Venice...
