San Sebastian to Paris

Gudday Fodorites, its been a while since my last visit. ( sounds like an entrée to an AA meeting ;) )
Heres the rough sketch of a plan, beginning of September.
Fly into Barcelona( due to using Emirates) ,two nights ( hotel suggestion near Las Ramblas if you have one.)
Train to San Sebastian,3 night at Hotel Maria Christina ( day trip to Bilbao, bus or local train.)
Train to Biarritz, pick up hire car and get to Saint Emillion ( probably stay at Chateau Grand Barrail unless you wise folk have a better thought) three nights ??
Drive to Amboise for some Loire Valley joy, Chateau De Pray ?? three nights
then drive towards Paris and drop the car off somewhere that we can catch a train into Paris, is Versailles a handy station for this ? Three nights, somewhere in the 7th or the 8th.
5th trip to Paris so we like to try different areas.

Thoughts?, restaurant suggestion particularly for San Sebastian and St Emillion
