No!
You will see some districts with wooden Ottoman houses in istanbul, especially along the Bosphorus, which will give you a better idea of the kinds of life people led in the old days.
Safranbolu, as part of a longer trip which includes Bartin, Pinarhisar and Kastamonu would be interesting for an old wooden house enthusiast. Unfortunately Safranbolu is overly touristy whereas the other towns I mentioned hardly see any tourists.
