That is like asking what are must-sees and places to stay in California. Not answerable without knowing when you are planning to go, what type of budget you have, what you are interested in, how you plan to travel around, etc. As Sheila says - do a search for Scotland and edinburgh, get some idea of what you are looking for and come back with some more focused questions.
