I am going to Germany on December and i am thinking about stay one night in Nuremberg , then next one in Rothenburg and the last one in Heidelberg.
I had already been to Rothenburg on May, but i thought that rothenburg is too calm at night. Even on Spring, I was unable to find any pub or taverns opened until late.
I am not used to cold europe winters, but I think that nights tend to be very long and maybe rothenburg was not a good choice for winter nights.
What do you think? Should I stay one more night on Nuremberg and do a daytrip to rothenburg?

Your daytrip plan seems sensible to me. You can do N'berg - R'berg - N'berg for 16.20€ with a "Tagesticket Plus" daypass.

You could also visit Rothenburg during the day and move on to Würzburg for the evening - that way you're closer to Heidelberg.
