Rome, Florence and Venice with 18 and 20 year old daughters

I will take any advise on what to do in Rome/Florence/Venice with my 18 and 20 year old daughters!! I get so overwhelmed that I've never planned it. If my girls are having a great time....I will too! Neither of the girls drink so we don't need the party scene. We are there to make memories as a family. We plan to go for 10 days in late May. Is it easy to plan our own days? If so, any suggestions? Should we do private walking tours and or car tours? If so, any suggestions? I have tried to find a set itinerary but haven't had any luck. Just need help! Any suggested day trips? Will we need a car? (I hope not). Thanks so much...
