Drives are not particularly difficult, but fast trains are much faster than driving. Florence to Rome is 1h30min by train, you are not likely to drive it in less than 3 hours (you cannot drive faster than 130 km/h while the train does 200 km/h). Keep this in mind when planning. Scenery is exactly the same.
Agree that train is far better than driving for your trip.
Seeing Venice from Florence is probably impractical compared with staying a few nights in Venice. Ingeneral, you seem to be going places to go somewhere else. Sorrento is great for that, as the places you want to see are nearby and Sorrento is a tourist travel hub.
You won't be able to do all you want in Rome in the time you set up. I suggest cutting back Florence time and adding to Rome, or else cut back on your Rome goals. Sorrento sounds about right.
I'd add another day to Rome.
For the rest of your questions get your self one or two good guidebooks and do some research. Google is good for that too.
