We're going to be Germany in late July and would like to take a river boat cruise somewhere in Europe but don't want to commit 7 nights of our trip to it - three to five would be great. I've been unable to find anything and wondered if anyone on the board had any suggestions or if one even exists. Thank you.

Seems to me like you can take a river steamer on the Rhine--maybe just for the day. That would at least be a start.
There are a lot of day cruises on the Danube, and I believe there are some shorter 4-day (3-night) cruises. These are typically on older, smaller vessels, but they do exist. They won't be as luxurious or as all-inclusive as the typical river cruise. I'm sorry that I don't have any specifics to offer, but I've heard about these, and I'd encourage you to do some further research.
