Return to Turkey

I visited Istanbul for several days a couple years ago. My now girlfriend would dearly love to visit and I look forward to experiencing the city with her. Since I hit the main tourist attractions in the old town I'd like a chance to see something new. Does anyone have a favorite place in Turkey that is either outside of Istanbul or something that is not on the normal itinerary? We could either stay in country the whole time or possible stop in a new location on the way back (outside of Turkey). I'd like to get a view of life outside the western-influenced city.
