Puglia

We are going to this area in late August or early September and while most of the postings are centered around the lovely ancient villages etc which we will definitely see plenty of, can anyone recommend the prettiest location/village/B&B as far as a spectacular view of he sea vs inland? We would like a base there and will likely make day trips every other day. We don't need beaches per se, just somewhere spectacular with lovely blue waters to overlook and relax at the beginning and end of our days. High elevation is fine too.
Thanks !!
