I Card makes sense for agressive tourists who
are going to do A LOT...otherwise sort of a sham/scam
No you can't use the IAmsterdam card on the trains - only on GVB buses, trams and metro.
You can probably buy the card at the tourist info desk in Arrivals Hall 2 at Schiphol, or at the tourist information place opposite Amsterdam Centraal Station.
You will need to buy normal tickets for the train into Amsterdam.
You need to activate the public transport part of the card on a bus tram or metro. It is valid from the time of activation for the time period you have chosen to buy. The entrance part of the card is activated the first time you use it to enter an attraction with it.
Full instructions are given with the card, and no doubt the person selling it to you will explain it all.
Investigate the efficacy of the pricey IAmsterdam Card for what your real plans are - could be a great deal or a waste of money, depending on your plans.
