Provins on a weekday?

Provins on a weekday?
I am heading to Paris on May 22. Since I have been several times (or more like numerous times) I am trying to plan some day trips.
I am considering Provins, but due to the travel schedule I probably would only be able to go on a weekday. Reading reviews it's apparent there is more to do on a weekend, but would a weekday visit still be worthwhile? Are things open? (I am not really into the "shows" so missing them is not a deal breaker)

Provins can get crowded on weekends too as many French come here then. A week day lets you have the town pretty much to yourself, especially in May.
Take regional trains from Gare de l'Est - about an hour to Provins - just buy tickets at station - no reservations needed nor possible I think.
