In planning our intinerary I reviewing a number of sites to find out when shops are closed in the towns we're visiting -- appears Sundays and Mondays are the days. I can''t find one site that will provide this information. Hoping those on the forum can comment on which days to avoid certain towns when shops may be closed. Appreciate comments on the following towns:

Avoiding certain towns on certain days won't work - it's not a sure thing that shops will be closed in any given town on any particular day (except for big stores like supermarkets, and even then a town may have one that's always open on Sundays or Monday afternoons). You can pretty much count on all shops being closed all over France on Sundays and Mondays. In high tourist season, shops are more likely to open Mondays - usually in the afternoon. The bigger the town the more likely a place or two will be open.
Provincial supermarkets are often open Sunday mornings at the same hours as any local street market. There are no street markets on Monday, but you will find the supermarkets open.
Most other shops are closed on Sunday and open on Monday. Cities like Avignon and Nimes are CITIES where things are open 6 days a week.

You don't say when you'll be traveling, but if it is during the tourist season, for the "touristy" villages on your list (St. Remy, Roussillon, Gordes) it won't matter really. Plenty of things will be open any day of the week. Uzès, I think might be the same, but I don't know it as well. Arles will be fine, as well, except perhaps for Monday, when lots of shops will probably be close.
Nîmes and Avignon, being more city-like, you'll find many, many shops closed on Sunday and Monday. Museums and sites should be fine, but the fact that the stores are all shuttered up makes for a less inviting ambiance (and less shopping, of course, if that's your goal).
Keep to the smaller villages and Sundays and Mondays - or better yet, long drives in the countryside.
