Provence Area with 19th Month Old- Need Advice

My husband and I are planning a trip to the south of France in June 2014 and thinking of bringing along our daughter who will then be 19 months old. Any tips from those who have travelled to Europe or this particular area with a child this age? We will likely take a direct flight from NYC to Paris, and then the TGV to Aix-en-Provence.

I want to do a couple of days in Aix, and then spend some time in surrounding towns or beaches. Any suggestions for good towns to visit that are relatively close? We'd probably rent a car or could take trains. Any great hotels in particular? Would likely want to stay somewhere with a pool or near the water for some portion of the time. Any suggestions appreciated!
