I saw a hotel that I liked on priceline europe that was the same price for 2 nights as it was for one night if I book through hotel website. Can you trust priceline?

That's the direct booking side of Priceline. Yes, it's very trustworthy.
On the odd occasion with any third party site (and sometimes even directly with the hotel), a hotel claims to not have your reservation. To forestall this, do your booking with the third-party site, and then after a couple of days, contact the hotel directly to ensure that it has your booking.
