Plitvice, Rovinj and ?

My husband and I will be in Croatia/Slovenia in May. At the end of the month, our daughter and son-in-law will join us for 8 days on the ground, flying in and out of Zagreb. They definitely want to see Plitvice (2 nights), and I thought we'd concentrate on the northern part of the county, possibly staying in Rovinj (3 nights). I've ruled out the more popular cities like Dubrovnik and Hvar as I think that would be too much travel time. Can you suggest a third spot that will help give them a taste of Croatia? Or should we try to drive to Lake Bled or another spot in Slovenia? We all like food, wine, history, and are having a hard time narrowing down what to show them in the short time they will there. Thanks for any suggestions!
