Please Help! 7 Nights in Venice Arriving Day After Carnival Ends

I have been researching our first trip to Venice on this site, and I have found a lot of wonderful and infomative information from older posts, some dating back to 2007. I have enjoyed reading Peter_S_Aus, Franco, PBSF, and sidcundiff's posts, to name a few! I just joined Fodors, and I am looking for more up to date recommendations for restaurants, and maybe some sample itineraries to go along with those restaurants. We would prefer restaurants that aren't touristy. (We unfortunately don't speak Italian, but we aren't afraid to go to an restaurant with a menu only in Italian).

My husband and I both recently turned 60, and this trip is a birthday gift to each other. We have rented an apartment just off Rio Terra San Vio, In the Dorsodura area. We would like to explore, enjoy and savor Venice. We love to cook as well as going out to eat. Please help with some ideas as how we can wander and sightsee, and eat in the various neighborhoods in Venice. We would like to try cooking as well. Any advice would be extremely helpful! We arrive at the airport at noon on Wednesday, February 10th and leave very early the following Wednesday.

For example, Wednesday, day 1 explore the Dorsodura area and visit the the Basiica di Santa Maria della SaluteI, then eat lunch at " ? " restaurant, then visit Gallerie dell'Accademia, and have dinner at " ? " restaurant. Any help or guidance would be appreciated, because at the moment, I am overwhelmed by all of the information I have been collecting. We just booked the trip at the last minute a few days ago, so this hasn't been long on the planning board!

Also, is the Aqua Alta going to be a problem during this week?
