Bonnieux is a good Luberon choice, because roads radiate in four directions, so that you can loup around when exploring the area.
At the Bastide de Capelongue, ask for the romm which I believe is called Simone. Most of the rooms are small, but this one is designed for handicapped access and is huge. The hotel charges half board, but will make exceptions.
The restaurant La Feniere, located south of Lourmarin on the road to Cadanet, is one to consider.

If you are going to Fontainbleu directly from picking up the car rental then I assume you will be taking the A4. If that is the case you may want to pick up your car at Gare de Lyon since it is on the eastern side of the city and is fairly easy to get to the A4 from there.

It might be easier to take the train to your first night's destination outside Paris and rent the car there.
You really seem to have done your homework for this trip; my only comment is that I find Aix overrated (pretty but little else). Avignon, Orange, Nimes in that area all impressed me more.
