The paradors are wonderful and within your budget, but most are outside of town. Check out their website at parador.es. Also check out sol-melia.com and petrabax.com for hotels.

Don't know how many will come in at 100 euros, as it depends greatly on the dates (if during Holy Week or April Fair, you won't find any unique places for that amount).
But, depending on your dates, you may find something quite nice, particularly in southern Spain for the swelteringly hot months (low season) of July-August.
The paradors this year don't match your budget unless you use the 5 night plan.
The Parador 5 night plan in southern Spain goes this year for 95 euros per night, but it's only available on certain dates, usually mid week and doesn't include the 7% vat.

For a nice little property in Madrid (where hotel rates have soared in '08), consider the Hotel Plaza Mayor, in Old Madrid, within a pleasant walk of the Museum Triangle.

Or the Room Mate Mario, in the Royal Palace/Royal Opera House area. This is the Room Mate Madrid property that comes within the 100 euro budget for a double on a regular basis. After July 15 (and during slow periods), the other Room Mates, Oscar and Laura, reduce their rates substantially.
There soon will be 3 Room Mates in Granada and 2 in Málaga.
And the Room Mates always include breakfast and there's free Wi Fi.

I found the Parador that I stayed in to be very formal and overpriced, and the bedrooms were in a modern extension. I would not stay in one again.
Much more enjoyable and reasonably priced were the places that I found through Alistair Sawdays Special Places to Stay in Spain.
