photo trip to Ireland for 1 week in Sept.

i'll most likely be going in mid September to Ireland for a week and would love some help from the experts. The purpose of my trip is photography....yes, pretend i'm shooting for national geographic or something ;-) I'll be based in Dublin and will want to explore it for a couple of days. I'll definitely be seeing the cliffs of moher but beyond that i'm really at a loss as to what i want to shoot and see. This is not really a tourist trip but i have been tasked with capturing Ireland in 7 days (you can probably include N. Ireland too) I do have several concerns/questions:

1. Can you think of a place with green, sweeping, hills with sheep, maybe a castle/stone tower or something and not too far from Dublin?
2. I don't plan on renting a car while in Dublin but will probably want it for exploring the countryside. I'm American and a little concerned with driving on the left and sitting on the right. Are there better ways other than paying for tours? (You'd think after driving in Mexico City i'd be ready for this.) Are there better ways for getting out there?
3. Think castles in lush settings, chalk cliffs, colorful pubs, things like that. Anything else you think would be very photo worthy please let me know. Not terribly far from Dublin
