Paris/Loire Valley or Florence/Tuscany for 10th Anniversary?

My wife and I (mid-late 30s), are celebrating our 10th anniversary this Fall and were planning a mid-September trip to Europe for 7 days. We have been to Paris before, as well as Burgundy, Provence and the Cote d'Azur. We were debating between relaxing few days in Paris and a few days in the Loire Valley vs. a trip to Florence and Tuscany. I went to Florence when I was a college students on college student budget for 24 hrs. We want good food, relaxation and a lot of walking without too much hard-core sightseeing. Any thoughts? Would it be possible to do Florence, Tuscan villages and the Cinque Terre as well in 7 days?
