Paris & north region or south

Help!!! We are 4 active seniors determined to do Paris/ France
Most package tours offer 10 days with trips to Normandy and north or Paris and train to Lyon
And city's south. Has anyone used Traffalgar. Or insight tours
Can anyone suggest a better operator or have a better plan
Planning on early Sept
Also love wine and food
