There are a few veggie restaurants in Paris, but not many. If you eat cheese and eggs, there are many sandwiches choices for lunch. Also, pasta or rice with sauce, no meat. You might try Chinese or Vietnamese restaurants as they typically have veggie only dishes. At French restaurant, we would order pasta/rice without meat, just the sauce. We found the restaurants to be very accomodating when we explained we don't eat beef, pork, poultry or fish.
Although I haven't tried these restaurants personnally, the following is a list of a few vegetarian restaurants that seem to come up in various sources:
