We are flying into Paris for a few days in Sept. before departing by train for Alsace and Burgundy where we will trek the wine region for a couple of weeks with backpacks.
We want to leave our luggage at the train station while trekking but cannot find information about longterm luggage storage - only short term. We've also learned that it is no longer possible to store luggage at Charles De Gaul or any airport.
Would appreciate any and all suggestions. Thank you.

The left luggage office at Gare de l'Est is on level -1 across from the restrooms. The rate is 4.50€ per item per 24 hour period.
In olden times, some cafés across from train stations also provided a "consigne" service that you could pay for.

I don't think leaving bags at CDG would be very convenient if you are leaving from a train in the city.
Not sure where you looked for info, but all the train stations info for consignes is on the train station website http://www.gares-en-mouvement.com/fr/frpst/services-en-gare/services/#bagage
and on the Paris Tourism one, but I'm not clear on what you mean by short-term versus long-term, as it's the same in those places, payment by time period:

You also may be able to make arrangements with your hotel...
