We'll be coming in on the Eurostar from London at around 9pm on Monday evening.

We found the gardens at Giverny, well worth the trip.Versailles is beautiful, if, you see anything midst the crowds. A Must is the Eiffel Tower and the Louvre!
Suggest you need a good Paris guide book from the local bookstore. Is Versailles worth it? For first timers probably. Do a search for Fromageries on your computer. They are all over the city.
If you've made it to the Eiffel Tower look for Dominique Rue. It's a street (I think) just east of the Eiffel tower. There is a small souvenir shop on the right side of the street. I'm sure there are scarves and stuff outside the shop. Also on same side of street there is a great pastry shop and continue walking away from Eiffel tower on Rue Dominique there is a restaurant called Cafe Constant. Good food and service. Good luck finding your way around. It's trial and error.

Good souvenir places?
Montparnasse - a good neighborhood. There are several reasonably priced restaurants on the boulevard east from rue de Rennes. Great lunch at Alliance Francaise over on Blvd. Raspail. Lunch is even cheaper at the Sorbonne. Go to the markets at rue de Buci and place Maubert to buy your wine and cheeses to picnic in your room. It doesn't get any cheaper than that.
Most restaurants offer a cheese board after dinner. You can typically choose three wedges from an assortment of ten or so.
Get up to Sacre Coeur for a good view of the city. Your Navigo Découverte or metro pass allows you to use the funicular. The tiny street Steinkerque in front of it has a high concentration of souvenir shops.
Café Constant is hardly a good recommendation for two young guys with a limited budget. And it's the rue Ste-Dominique, in a pricey, fairly toney area of Paris. NOT where these guys want to end up, IMO.
There are cheap souvenir places all over the rue de Rivoli and close by Notre Dame and the Centre Pompidou.
Cheap cafés? Head to the outer arrondissements - the 11th, the 20th, the 15th, the 19th... Go to Oberkamp for good inexpensive nightlife/bars. You can also avail yourselves of the inexpensive street food in Paris - crèpes and sandwiches and simple things for just a few euros. And pizza places and ethnic restaurants anywhere. Go to outdoor markets.
Cheese is everywhere, thankfully. There's an awesome cheese shop on the rue Cler, not far from the Tour Eiffel, but it's not essential to head for a particular one.
