My sister and brother in law want to visit Paris for their 25th wedding anniversary and are thinking of including Nice with a tour to keep it stress free. Any recommendations? I'm thinking that there won't be many to choose from because of the distance....would the Loire Valley or Normandy or Mont St, Michel be better choices?

I'm not sure what you mean. Are they looking for a guided tour of just Paris and Nice? If that's the case, I agree that's going to be a hard tour to find.

I also question whether tours are stress-free. The very few I have taken were a lot more stressful than doing what I wanted to do.

no need to do a tour, but you are right it is quite far...i might consider flying or take a fast train....no need for a tour once you are there...it is not that big..

another alternative is for them to fly into paris and out of nice to home

Right, fly into Paris, take the train to Nice and fly home from there (or vice versa). Loads to do in and around Nice without a tour or a car - click on my name for my French TR starting in Nice.
