Pairs to Loire for day trip

Planning an 8 day trip (May 3-10) to Paris and Amsterdam. While in Paris, we would like to do a day trip to Loire valley for a day of cycling (perhaps 20-30 leisurely miles) and to "see" some of the chateaus. We are less interested in spending time inside the chateaus than in exploring the countryside and stopping at markets and villages, although we do want to ride to some of them.
Would appreciate 1) any suggestions on what train to take from Paris to Loire valley 2) where should we get off to rent bikes and be in a good location for a nice 20 -30 mile ride? 3)what highlights to see in one day of relaxed cycling.
And we are open to staying overnight and train back to Paris very early next day if necessary. Thank you!
