Opinions & Advice Welcome On Trip From Amsterdam To Venice

My husband and I are two seniors who are planning a trip for Sept 2014. We have the plane and cruise reservations already.

Day 1 – Fly from USA to Amsterdam.
Day 2 – B&B in Haarlem.
Day 3 – B&B in Haarlem – Visit Corrie Ten Boom House (On my bucket list).
Day 4 – Fly to Innsbruck. Train to Garmisch-Partenkirchen hotel. Luge.
Day 5 - GP hotel. Tandem Paraglide – first time- over castles if weather permits.
Day 6 – GP hotel. Lift to top of Mt. Zugspitze.
Day 7 – Train to Bolzano – Stow luggage at bus station – Visit Otzi.
Bus to Selva Di Val Gardena. Overnight in Selva.
Day 8 – Overnight in Selva – Hike, Possibly paraglide again.
Day 9 – Overnight in Selva – Hike.
Day 10 – Bus to Bolzano - Train to Venice – Secret Tour of Doges Palace
B&B in Venice.
Day 11 – 7 Night Adriatic Cruise.
Day 17 – Overnight near Venice airport.
Day 18 – Fly to USA

My concerns –
1. We have decided to take one carry-on piece of luggage each. We will forgo dress-up nights on the cruise, but we would like clean clothes. Apparently there are no public laundries in Selva. Not sure I want to spend my only day in Venice in a laundry. Any suggestions?
2. I wonder if hiking in the Dolomites will be too much of a duplication of hiking in the German Alps? Any thoughts on that?
3. Should I make train reservations before leaving the US?
4. What am I missing?
