The Night Watchman Tour begins at 8pm (or at least it did in March, when we went.)
You didn't say what your budget was for accomadations.

If you want more upscale lodge option, we stayed at the Burg Hotel and loved it. Great location.
As for the Nightwatchman's tour...it started at 8 and we met up a few minutes before that in the main square.
