We are planning to do NIN in July from Oslo to Bergen. Can we do this justice in one day then spend a couple of days in Bergen and then take a direct train back to Oslo? Also, how do you handle luggage changing from train to boat to bus, etc.? Thanks for your help.

NiN can be done several different ways and with stopovers, but the most popular, and I'm assuming the one you're planning to do, is the one day trip either Oslo to Bergen or Bergen to Oslo taking the famous Flamsbana railway from Myrdal to Flam and then the ferry along the Naeroyfjord to Gudvangen and bus to Voss for train to Bergen. It is a long day, but still a popular option for those with limited schedules.
There is a porter service www.porterservice.no which will transport your luggage from Oslo to Bergen. The fee is about 250 NOK or about $43 per piece. Many still bring their luggage with them.
You could break the journey by staying at Flam, Aurland or even Stalheim which is on the bus route from Gudvangen to Voss. Have a look at the Stalheim website www.stalheim.com. You could then spend one and a half days in Bergen and fly back to Oslo. The train you'll be taking on NiN is the same as the Bergen to Oslo, so you'll just be repeating the route, and it takes about 6 1/2 to 7 hours. Flying would be a better use of your time IMO.
We did it in one day, taking along our own luggage. But we knew that we were going to see more of the fjord country.
We did the Oslo to Bergen NIN trip with a one night stopover in Flam which was perfect for us (2 adults with our 8 & 10 year old kids). It gave us time to relax in Flam and we even rented a little motorboat and went out into the fjord by ourselves. We also used the luggage service which was mentioned. I highly recommend it. We packed a few things in our backpacks and it made the trip much simpler.
