Alsace is fascinating - either Strasbourg or Colmar makes a good base and you can tour the wine road. Definitely worth at least 3 days or so.
Trier is a town in Germany we found very interesting - esp the juxtaposition of the large Roman remains and the cute typical Germanic town.
If you want to visit the eastern portion of Belgium there are a lot of wonderful small towns to explore - many with great churches and small WWII museums. We actually started out staying in a manor house in Spa for several days from which we visited Liege, zipped over the border to Aachen (Charlemagne's capital) which has some remains in the church and town hall and then headed south through Begium (small towns and WWII sites as noted) and then to Luxembourg, Trier and a couple of days exploring the Moselle valley.
Obviously there are a lot of other choices if you want to head straight across France - and depending on how many days you have.
You could explore the Alsace-Lorraine and the Champagne area. The Michelin Green Guide might be useful.
