Normandy beaches, Mont Saint Michel and Paris are our destinations, but would late May or June be a better time to visit? Thinking of weather, crowds, tourist activities and conveniences, like restaurant and shop hours, etc. Also hoping for favorable plane fares. Any suggestions?

Get your plane fare and have at it. Not much to dislike about either time. THIS year?
Less crowds and lower airfares in May without giving up much of what you seek...that would be my choice
We were in Normandy for 2 weeks in late June last year. Chilly & drizzly for most of the time, with a few days of mild weather. Not too crowded with tourists, although we stayed away from the super-touristy places. Mt St Michel is always crowded. We didn't visit any D-Day beaches (did that on two prior visits). We were also in Normandy in early/mid-July in about '01 and it was chilly then too (we live in the US in a mild climate area - San Francisco). The beaches around Deauville didn't have any sunbathers. Prior to our visiting Normandy in '01, we were in Brittany for 3 weeks and it was very hot for about 5 days, then got chilly.
I would go in June - weather is sporadic but June is closer to summer. All the other "conditions" you are seeking should be the same in June as in May - except resort type beach areas will have more activity in June (but it could still not be "beach weather").

Did it rain besides being chilly? We are going there in late June, beginning of July. I want to make sure to pack the right clothes.
If you are going to be in euorpe for more than 5 or 6 days (except southern spain) it WILL rain. And i fyo uare north of hte alps the chances of being chilly are not much less than the chances of being warm (that is spring chilly - not winter).
With weather there is never any guarantee.

We've been there in late May and the third week in June. By and large we had good weather - warm and sunny in May, cool and variable in June. Every year is different. Get your best airfare and hope for good weather.
The weather in France this year is entirely unpredictable.I haven't seen anything like it for 35 years! Last year wasn't wonderful either. We went from France to Croatia and back by car in May/June. I was in Normandy end of June beginning of July about ten years ago. One day of off and on showers, one day of downpour, the rest sunny. Always had on at least a sweater, some days both light jacket and sweater.
We saw blue sky and sun for about 30 min today. Very chilly and my feet are froze. Back at our B&B warming up beofre we walk for dinner.
