Needing Suggestions for next European Vacation

My family and I have been to Europe several times and am hoping for suggestions on our next trip.

In the past ten years, we've been to Italy (twice), France, England, Germany, Austria, Switzerland and Spain.

We are wanting to put together a family vacation for Summer 2017, but am a little lost what would be the next best places to visit in Europe. I was thinking that possibly a combo of Amsterdam and Ireland might be fun, but then I thought that I'd throw it out to the forum.

About us:

Budget is fairly unlimited, within reason
Family is my wife and I, and three college age kids
We love active pursuits and always hire at least one full-day private guide with transportation
The trip would be about 10 days total, plus travel days

Please send me any ideas on areas that I might not have thought of and, if you would like, I'd love to see suggested itineraries.
