Need tips for travelling with a 15 month old baby

My husband and I would be visiting Turkey with our 15 month old daughter in Sept (8 - 18th). The current itinerary is 2 days in Istanbul (stay in sultanahmet area), 2 days visiting Ephesus / Aphrodisias, flying to kayseri to spend 2 days in Cappdocia and finally spending the remaining 3 days again in istanbul. We would be renting a car in Ephesus and again in Cappadocia. So my questions are:
1. Should we carry a stroller at all?
2. How easy it is to see the sights / mosques in sultanahmet with a baby in a stroller?
3. Same question about Ephesus?
4. Is a baby allowed for a hot air balloon trip?
5. Finally, is an Indian driving license enough for renting a car?
