Our family will be spending a week in the Netherlands in August. Have reservations for the first and last night in Amsterdam. Is it realistic to think we can wander the countryside in the intervening days and find hotel rooms as we go along without advance reservations? We'd like the flexibility but don't want to end up sleeping at the train stations! Thanks!

Sleeping in smaller towns and villages outside of Amsterdam, The Hague, Rotterdam and Utrecht should not be a problem. There's enough smaller hotels available and you might love it!
August is high season, though, so you might not find much available near the beach. Also, don't make the mistake of arriving somewhere at 8PM without a reservation, if you can help it. It's safer to secure lodging early in the afternoon. Try Delft - I live here and it's charming!
