Need itinerary help in Andulusia

My wife and I will have 8 nights in Andulucia in the beginning of October. We know we want to stay in Seville and Granada but also want to visit some of the White Towns. We were thinking of 3 nights in Seville and 2 in Granada which leaves 3 nights to explore. First, is 2 nights in Granada enough? Does it make sense to do 3 in Seville and 3 in Granada? What White Towns would people suggest visiting? Are there some better than others for an overnight? We have been looking at Arcos de la Frontera, Ronda, Malaga, Cadiz, Jerez de la Frontera. We know we can't visit all of these in our time period. We are happy to rent a car and explore. We are flying in and out of Madrid.

All suggestions are most welcome.
