We're planning on being in Italy for 8 nights - flying into Naples and out of Florence. I know many say not to do north and south on one trip but we still want to.
Should we stay in 1 place on the Amalfi Coast to save on packing/unpacking or leave it split up?

With 8 days (including travel days on either end??) pick 2 places MAX. You will lose at least 1/2 day in transit each time you move so with 4 places you lose 2 days so that leaves you with 6 (assuming you have an additional day on either end to arrive and depart) to see 4 places and even less if you include travel days on either end. You wont see much other than train stations...
I also would not move four times.
You could stay in Florence as a base for the second half of your trip. Go out on a day trip with a car and guide to see some of Tuscany, wineries, small towns etc. My mom and grandma took the train from Florence to Lucca, a medieval walled city in Tuscany. I think it took them about an hour each way. I didn't go because I had more I wanted to see in Florence.
Capri is definitely worth it! It is THE most stunning place I have ever been to! The boat cruise around the perimeter of the island is one memory that will never be forgotten, and happens to be one of the best things I did on my five week trip, which roamed over four main countries! The chairlift to the top of the island from Anacapri is well worth the effort too!
