Need help on best 7 day Istanbul / Cappadocia end of April itinerary

It's our first time trip to Turkey and would appreciate your expert advise. We're 2 women in our 30s.

Travel dates are April 24- May 1 and we're flying nonstop from Singapore and arriving early AM. Other than visiting the cultural sites in Istanbul, we're interested in good food and shopping. We would also like to go to Cappadocia to see Goreme open air museum, Kaymakli underground city and most of all do a balloon ride to see the fairy chimneys.

Itinerary so far:
Day 1: Arrive IST 7.45 AM. Transfer to Cappadocia AM flight. Arrive Cap midday - either check out Goreme air museum or underground city. See show or just dinner in the evening.
What time flight should we pick? How fast can we transfer from intl flight to domestic?

Day 2: hot air balloon ride early AM. One more activity and depart for IST late PM. Nice dinner out around hotel.

Day 3 & 4: Visit must see sights: Topkapi palace, Hagia Sofia, Blue Mosque, Byzantine Hippodrome, Basilica Cistern and end the tour at a hamam.

Day 5: Bosphorus cruise, spice bazaar, Dinner at Bebek

Day 6; Grand bazaar, spice bazaar,

Day 7: Beyoglu & Taksim area: Dolmache palace

Day 8: return flight to SG midday

We haven't booked any tours and just want an easy free-flowing kind of trip. Understand though, that we would need to book in advance a tour in Cappadoccia. Can our Cap hotel do this for us or do we need to contact local tour guides directly?

Any suggestions on "must do", e.g. Show or ticket museum, restaurant bookings etc would be most appreciated! Oh, also which is best car airport transfer to use. Thanks!
