Thanks to everyone who gave me feedback on my Croatia/Slovenia itinerary. We will be there for 2 weeks at the end of April/beginning of May. We fly into Zagreb and out of Dubrovnik.
My concern is that some of the places we are thinking of going will still be shut down for the winter. We haven't yet finalized our itinerary, but if any of the following areas will just be too quiet to enjoy in April/early May, please let me know and we'll modify the plan accordingly. Thanks!

I was in Dubrovnik last year for two weeks, starting around the middle of April. It was rainy, cold and the wind (Bura) blew every day. I think I had one day of warm sunny weather. But... they said this was unusual and just the year before it had been hot at that time. So, I guess you should keep checking the weather online and pack accordingly. Most of the restaurants and shops will be open. Some of the tours and ferries were still on winter schedule though. It was actually very pleasant not to have hordes of people there.

The weather is usually nice in April but there are always exceptions to the rule.
Not sure it that is the right order of your itinerary but I would definitely do Rovinj/Istria before Plitvice lakes.
I'm assuming you be hiring a car.
I would chose korcula or Hvar as your island destination.
