Need an amazing 2 day excursion from Rome

Hi! I am starting to plan a trip to Italy for Easter week 2013. My husband and I have been to Rome, Florence, Venice and Capri. This time we will be taking our 12 and 9 year old daughters (who are great travelers). We are trying to do this on a reasonable budget- so are not planning to hop all over Italy. We plan to fly into Rome and stay at the Hotel Eden (on a family of employee rate!) for about 5 nights, starting on Easter Sunday. After that, we would like to spend 2 nights in a different location, not too far, for a more relaxing end to the vacation. I have done some preliminary research, but am looking for any ideas. I am thinking: countryside, waterside, equestrian, castle stay, etc. (we stayed at an amazing castle in Germany with the kids and it was the height of our vacation- looking for something equally as amazing). We are open to upping the budget for something these two nights.
