My Autumn Provence Quandry

I almost have our autumn France trip all planned, except for two nights. After four nights in Burgundy, we'll spend three nights in the Luberon (Bonnieux). Here is our quandry.

I have two nights free before we head off to Pezanas for five nights to explore Languedoc, Cathar Country, etc. I've stayed in Arles before, so was planning on Saint-Remy-de-Provence, but it looks like the places I want to stay are all booked (except Hotel Gounod, which only has the smallest room available). I like to stay near enough own to walk to restaurants (DUIs on a vacation can be such a hassle)

I was contemplating Nimes as a base, but it's not really talking to me. What, if any, are your Nimes' experiences, or are there other nearby towns that would serve as a good base, or perhaps a place near Saint-Remy within walking distance of town?

I believe I have used all my allotted questions. Thanks for your help.
