Munich and Bavaria But Not In The City

We are looking for a place to use as a home base that would allow us to visit munich for day trip, the castles in bavaria, and has character in itself. We are not looking for 'action' but love the local character of places. We would have a car and drive to Munich, possibly salzburg, the castles and such. we plan 4 days and three nights (could be four). Family of 4 but looking for two rooms. we are not focused on the 'cheap' but neither on the expensive, as that doesn't fit the local flair. we had the most amazing UK trip doing B&Bs and simply love that concept.

help... i can't find something that makes sense. we have concluded we will take sleeper train at end to paris (from Munich) as we have 3-4 days there then london and home.
