Mosel Valley and Sarr bike questions

I've got an upcoming trip next month, and as part of the trip my daughter, 13, and I are planning to rent bikes and do some riding along the Mosel and Saar Rivers.

The original plan was to rent a bike in Trier, train to Saarbrucken, and then ride up the Saar and Mosel to either Cochem or Koblenz, taking seven or eight days to make the trip.

I ended up shaving a couple of days off the bike portion of the trip. So now we're planning as follows:
Day 1. Arrive Trier late
Day 2. Rent bikes in Trier and train to Saarlouis. Leave large suitcase at hotel for later pickup.
Day 3. Spend night in Saarlouis; then bike to Dreisbach and stay in hostel
Day 4: ;Tthen bike to Trier, enjoy big fireworks show, turn in bikes.
Day 5. Train to Cochem for two nights. Stay at hostel. Rent bikes in Cochem and spend a day biking along the river. Return bikes.
Day 6. 9 a.m. train to Munich.

My only concern is that I might be spending too much time on the Saar and not enough on the Mosel. A member of this forum has suggested that the Saarlouis to Trier segment isn't all that great and it has me a bit worried. Our original plan had us seeing everything, but now we have to pick and choose a little. Does anyone know the quality of the bike trail from Saarlouis to Trier?

I would like to see Saarlouis and perhaps Saarbrucken, just because of the heavy French influence. I was unaware that France had worked hard to take this province from Germany after both world wars until I started researching this trip. But, I'm wondering if I might be better served by just hopping a train, looking around Saarlouis and then training back to Trier to begin our bike trip, and biking all the way to Cochem.

I currently have room reservations, but this is almost a month out so things can still be changed.

Any comments or suggestions? Are bikes readily available for rent in Cochem? I know they are in Trier.
